The Last Week of February at The Lazy Vegan

The last week of February was filled with some storms and some sunshine! We had a very stormy day where the wind was the worst I've ever seen it here. I came home to find Paco & Luigi OUT of their barn and standing huddled together at the far side of the pasture. I couldn't figure out why they weren't in their barn...but as soon as I headed out there in my rain gear (with carrots!), I found out why- as I turned the corner in the pasture the wind nearly knocked me over. I was able to coax Luigi into the barn with a carrot but Paco refused to budge! And it is IMPOSSIBLE to move a donkey! Finally a carrot did the trick and he slowly walked the fairly long distance through the wind to get into the barn. In other Lazy Vegan news, I experimented making some "faux" milks this weekend, and found a recipe for cashew milk that is outrageously good! Yum, yum, yum. You'd never miss milk from a cow with this one (and the cow can keep her own milk!). Cashew milk! It is DELICIOUS!! Bravo hoped he'd get to try some, too!
CASHEW MILK
1/2 cup raw cashew pieces (I bought organic raw cashews (unsalted) in bulk foods at Whole Foods)
2 cups water
1 tablespoon maple syrup (I used agave nectar syrup)

1. Combine cashews with one cup water and sweetener in blender.Blend on high to form a thick cream.
2. Slowly add remaining water and blend on high for 2 - 5 minutes. SUPER EASY! Tastes even better after it has been in the fridge for a while.

I made a big batch! I also made rice milk, and that was good, too. But cashew milk is way creamier.

After the storm, a lot of much-needed relaxation in the sunshine was going on.

Wasabi spent one of the days down in the kitchen. She was very helpful while I cooked- she would toss her spoon around! We did have a mishap when she was using her litter box and I turned on the blender...the noise sent her flying! She hid out in her cottage for a while but soon recovered.

We see this sight so many times...she'll be hopping around and then will stop by to "check in" with her "baby"!
